April is National Soy Foods Month, time to start eating less meat and more soy-based foods.
Unlike animal products, which can cause high cholesterol, high blood pressure, heart disease, diabetes and certain cancers, soy has been shown to have positive effects on our health. It is packed with protein, is cholesterol-free and contains healthy fiber and complex carbohydrates.
Research indicates that soy may protect against osteoporosis, prostate and colon cancer, diabetes and even Alzheimer's disease.
Studies have shown that women who eat soy foods instead of animal products are less likely to develop breast cancer.
Another study suggests that soy may also benefit asthmatics.
Soy products are tasty, cruelty-free and convenient. Try veggie burgers, faux chicken nuggets and other mock meats or pour soy milk on your cereal and in your coffee - you can even order soy milk at Starbucks. Snack on low-fat frozen desserts like "So Delicious" and "Soy Dream" instead of ice cream.
Enjoy your soy. Just remember: A healthy diet should include an array of vegan foods, including lentils, fruits, nuts, beans, seeds, vegetables and whole grains. See VegCooking.com for recipes and product suggestions.
